  1. Preheat oven to 375 degrees.

  2. Grease the bottom of an oven proof skillet or casserole dish with 1 tablespoon of olive oil.

  3. Arrange the sliced sweet potatoes in an overlapping spiral in your dish. Fit them in as snugly as you can but try to keep them in a single layer, so they cook evenly. Overlapping is fine.

  4. Melt the butter, pour over the potatoes, sprinkle with sea salt and place sage leaves on top of potatoes. Cover with foil and cook for 20 minutes.

  5. Remove foil and continue to cook until potatoes are tender (about 10 minutes longer).

  6. Remove from heat and drizzle honey over sweet potatoes. Garnish with fresh sage.
